responsible for kitchen GP,staff training and moral.Menu planing and costings,wastage (or lack of as I like to boast).whilst working outside of compass I have done many functions including lords cricket ground and royal Ascot along with many CBI lunches as head chef.I have cooked for queen Elizabeth II,KING Juan Carlos of Spain,Sultan of Brunei,many celebrities and members of parliament,worked with Albert Roux and cooked for Anton Mossiman with a great personal recommendation from him afterwards.
