ABOUT NEKSHA DEVAKI
In my research, I\'m currently working on the development of sustainable plant-based food/bakery products. Creating and innovating new products such as cookies, cakes, icing and brownies have helped me to understand the technicality of the various factors that impact the integrity of the product. Communicating and conducting plant trials has made me understand the concepts of scaling up, mass-production and how it differs from laboratory trials. Maintaining effective relationships with the suppliers and vendors has provided me an opportunity to improve my communication and networking skills. My previous experience as a graduate research assistant has aided me to conduct laboratory experiments with ease and with which I was able to innovate new and economic products required in the current food and plant-based industry. Looking forward to many more new experiences which will help me expand and improve my knowledge in the food product development industry.
