ABOUT NA XU

I am Na Xu, a postdoctoral researcher with over 14 years of expertise in functional foods and nutrition, now proud to be a member of Infinite Roots®, a biotech company revolutionizing the food system with fermentation and fungi-based technologies. Throughout my career, I have focused on exploring the health benefits and processing of diverse food components from plants and mushrooms, such as polysaccharides, lipids, and proteins. For the health benefit, my major research is focused on the antioxidant properties and methods to delay oxidation using the cell model, mouse model, and clinical experiments. For food technology, I had experience in the extraction of food components using untraditional extraction methods including pulsed electric field extraction and ultrasonic-microwave synergistic extraction. My commitment to continuous learning has driven me to embrace emerging technologies in food nutrition, processing, and biology, always aiming to push the boundaries of innovation. At Infinite Roots, I am thrilled to contribute to a sustainable food system by leveraging my background in food science and fermentation to create the next generation of alternative proteins.
