1.Production management-Oversee daily production operations (egg breaking, filtering, pasteurization, mixing, and filling/packing).Monitor KPIs-To identify bottlenecks and causes of downtimes using paretoto improve line efficiency and output to meet production targets.Adjust schedules and manpower to balance supply vs. demand (e.g, based on product deliveries and customer orders).2. Process Optimization & Loss ControlTrack egg losses (cracked eggs, spillage, product waste) and work on reducing them.3)Quality & Food SafetyEnsure compliance with HACCP, ISO FSSC and local regulatory standards.Monitor critical control points (CCPs) like pasteurization temperature and holding times.Supervise Good Manufacturing Practices (GMP) – hygiene, sanitation.Support the QA team in sampling and conducting product testing.4) Inventory management,Coordination & CommunicationAct as a bridge between production, procurement, maintenance, and quality departments.Create Purchase Requisitions/Raise PR in D365 based on inventory,Communicate with procurement for egg supply planning,packaging materials,chemicals,pelletes etc5)Report daily production(DPR), downtime, and deviations to management.Equipment & Maintenance OversightEnsure that egg breakers, filters, homogenizers, pasteurizers, and filling machines are running properly.Coordinate with the maintenance team for preventive maintenance and breakdown handling.Keep records of machine calibration and cleaning schedules.6)Team LeadershipSupervise operators,Packers and cleaners on the production floor.Provide on-the-job training to ensure operators understand machine operation,safety and hygiene protocols.7) Documentation & ComplianceMaintain batch records, production logs, downtime reports, and sanitation records.Support in audits (internal, customer, and regulatory).Ensure traceability from raw eggs (supplier batch) to final liquid egg product.
