ABOUT ANJALI SHIBU

Master’s student in Food Science at Junia ISA, Lille, currently Research Intern at National Institute for Agricultural, Food and Environmental Research (INRAE), France, working on pea protein processing and fouling mechanisms.With the rising demand for sustainable and healthy food alternatives, plant proteins are increasingly explored as substitutes for dairy proteins. My current research focuses on understanding the thermal denaturation, aggregation, and fouling behavior of pea proteins during pasteurization and thermo-mechanical treatments.Through my academic and research experiences, I have developed a strong foundation in food formulation, protein functionality, sensory evaluation, quality control, and microbiological stability assessment. Thanks to the 3 months Internship at Albio Technologies, India, I\'ve developed product prototypes of functional nutritional bars. Conducted ingredient interaction studies, physicochemical analyses, and shelf-life evaluation.With technical exposure to HACCP implementation, production management (ERPSIM), and laboratory-scale experimentation, I am building a research-driven profile oriented toward R&D, formulation science, and food process optimization.Open to long-term opportunities in R&D and product development within the agri-food sector.
