As a Director of Hospitality at Arizona Snowbowl SKI Resort, I manage F&B operations across three on-mountain restaurants, two satellite food and beverage outlets, and a base area hotel and restaurant with $5M P&L to meet predefined sales, labor, COGS, and retention metrics.Highlights of accomplishment in this role include: I designed and executed F&B operations strategies (client relations, food safety, and company guidelines) to drive operational excellence, enhance customer experience, and achieve financial targets across the district. I built a culture of performance excellence and promoted two new GMs and a kitchen manager by delivering leadership to 12 managers and 180 hourly staff members. I reduced COGS by 8% and increased buying power by revitalizing the ordering process, replacing multiple local vendors with one vendor, and designing recipe cards. I increased sales by 54%(40% in the first year and 15% in the second year) by developing F&B selling systems, introducing menus, and hiring staff. I decreased the annual recruitment rate from 95% to 25% and labor costs by 2% and acquired returning employees by providing training and ensuring consistency in the labor pool.
