The Co-Centre for Sustainable Food Systems is a cross-border research initiative uniting leading institutions across ROI, NI, and GB to drive innovation in agri-food through science, technology, and social research. Its mission is to accelerate the transition to a sustainable, resilient, and competitive food system across the island of Ireland.My role: · Leading research on sustainable dietary patterns and cardiometabolic health within a €35M cross-border innovation centre.· Coordinating production of policy briefs, consultation responses, and evidence submissions across ROI, NI, England, Scotland, and Wales.· Translating complex nutrition and sustainability research into accessible, policy-relevant outputs for decision-makers.· Identifying and act on national and international policy engagement opportunities.· Contributing to major funding bids and collaborative research proposals.· Fostering strategic partnerships across academia, government, and non-governmental sectors to support resilient food systems,· Supporting multidisciplinary research outputs aligned with Platform 3: Healthy and Sustainable Diets
