My over 15 years of experience in restaurants varying from Michelin star awarded fine dining, high volume multiple outlet and banquet driven hotels to locally sourced casual bistros have prepared me for any menu or management challenge. Using a scratch cooking methods and focusing on usage of the entire product while incorporating so called “waste” products I have executed menus and recipes that have consistently met and exceeded the food cost requirements put before me.I use passion, experience and research to create inspired menu items while fully embracing the tenets of frugality, approachability and simplicity.An environment of calm, respect, trust and support is what I strive for in my kitchen while also working to maintain the crucial synergy between the front and back of house.My addition to any kitchen is positive.
