ABOUT STEPHEN VARELA

Since 2004, I have been involved in the culinary industry. I have worked in local country clubs as well as an Executive Chef. During my culinary school experiences, I have won three hot food competitions, three separate scholarships, the Dean’s list and membership in the ACF and NTHS. As the Executive Chef, I am responsible for all things culinary. I create, demonstrate, and plate all a la carte and banquet food items. I manage food costs in the ordering, prepping, and storage of all food items in the club and kitchen. As the Chef, I also oversee banquet production. Hold daily menu meetings with the kitchen staff and lineups with the waitstaff. Contribute to food and beverage meetings and help the F&B director with pairings of food and alcoholic beverages. I also have the luxury, yes luxury, of having to create a team from the ground up with the other managers of the club.
