About Shirley Clyde Rupert
My academic journey has equipped me with a strong theoretical background in chemical processes and their application in food science. My master’s thesis focused on drying fruit using ultraviolet light as the drying source and understanding how this light can degrade or improve fruit quality. In addition, other technologies were integrated to further enhance and accelerate the drying process, such as ultrasound and vacuum. During my master’s degree, I could demonstrate my ability to analyze complex processes and propose innovative solutions. My doctoral research currently focuses on studying the degradation of mycotoxins, specifically Aflatoxin B1 and Ochratoxin A, in soy beverages and grape juice using ultraviolet C (UV-C) radiation. These matrices were selected due to their significant levels of these mycotoxins, which are known potential carcinogens.
