Savage basketball arena that seats 7,400 in the stands, in-suite catering for 12 luxury suits, 105 seat sports bar, and a production kitchen that serves 200 club seats. • Maintain online waste management tracking website• Control a purchasing total spend of $8.5M and ensure that property maintains 99% compliance with approved vendor spend• Work with local vendors to meet the contractually mandated purchasing spend percentage with MBE businesses• Conduct monthly audits of each outlet in the areas of Food and Safety, and kitchen production productivity and waste management• Demonstrate adeptness in union contract and correspond accordingly to contract guidelines for hourly employees• Conduct hiring and training programs for all prospective employees as well as FOH and BOH implementation• Travel to assist accounts across the mid-atlantic region for large scale catering events. Travel to work with the corporate operations culinary team to assist in the writing of national menus for all of Aramark higher education accounts
