About Sean van Straatum

Growing up in Oakland, CA in close proximity to many Bay Area restaurants and hospitality venues, I took advantage of the opportunities to expand my culinary and beverage knowledge in the hospitality field. At the age of eleven, I developed a passion for cooking, visualizing my future in restaurant industry. My interest was driven further to cook in a variety of different restaurants such as the Carnelian Room, 1300 on Fillmore, and Restaurant Gary Danko in San Francisco. After receiving a bachelor\'s degree for Hospitality Management at Cal Poly, Pomona, I moved to Chicago to pursue my culinary passion at one of the most legendary restaurants in the country, Charlie Trotters.After one year of cooking and rotating around the kitchen, I was certified as a Sommelier through the Court of Master Sommeliers and made the transition to the service team. At Charlie Trotters, I developed a heighten sense of fine wines and worked with a team that consistently challenged me to strive for excellence. Unfortunately, the restaurant closed soon after in 2012, which took me to the next endeavor of Outlet Manager / Hotel Sommelier at the Peninsula Chicago. This was a whole new challenge of not only managing one restaurant, but also looking after the wine program for the entirety of 3 restaurants, bar, and the banquet division. Thus giving me the opportunity to move back to the west coast and join as restaurant Manager / Sommelier at Viceroy L\'Ermitage Beverly Hills. I have been at Viceroy for since 2014 as the Restaurant General Manager. Currently, I am exploring the club industry at Oakmont Country Club in Glendale.Throughout my career, I am been privileged to work with amazing individuals that continue to motivate and inspire me. I look forward to always being open to explore, learn new concepts, and immerse myself into the world of hospitality.
