The Lettuce Help Center, a project by Cascadia Produce in partnership with the Seattle Good Business Network and Cedar Grove Composting, aims to reduce organic waste and ensure rescued food reaches those in need. The program is the result of Industrial symbiosis Grant and targets food rejected from the retail system due to various reasons or overstocked by farmers. It reimburses originating farms for sellable products and supports donations to organizations aiding those in need. The pilot demonstrates a viable business model, increases fresh food availability to food banks, and aids small businesses in incorporating surplus products into their menus. Cascadia Produce collaborates with farms, non-profits, and government programs to combat food insecurity in Washington.
