My first day in a commercial kitchen was after a Sunday Brunch as a dishwasher. I walked into a massive pile of dishes, pots, pans, ect. that needed cleaning. I was a deer in the headlights! Didn’t know what to do, or where to start. One of the cooks came over to assist. She was very aggressive, moved fast, and in an instant it became clear to me. Either you do the dishes, or the dishes do you. Light bulb moment.These days, still taking the bull by the horns and occasionally slaying some proverbial dragons.I have the heart of a cook and the soul of a butler. Who would Batman be without Pennywise? Dalton Abbey would tumble like a house of cards without Mr. Carson at the helm. After 28 years in restaurants I have found my way around all areas of the business from the dish pit (where the magic happens) to the C-Suite of the corporate office. Service is such a noble calling. Gratifying and a worthy way to spend your life. Makes me warm from the inside out. I am a believer in servant leadership and comfortable \"being the boss\".
