   To assist the Executive Steward in managing the stewarding operations and administration. • To assist the Executive Steward in Budgeting and P&L for the Department. • Take complete in-charge of Stewarding Department in the absence of the Executive Steward. • Assist the Executive Steward in Recruitment of Supervisors and Stewards. • Maintaining HACCP standards in the F&B Back-of-House areas and also maintaining the records. • To look into maintaining an organized, clean and sanitized back-of-house Food & Beverage area. • Negotiating with the suppliers for purchase of Operating Equipment’s to be used in F&B Kitchen and F&B Service operations. • To provide the Materials Department with detailed Product and Purchase Specifications for all products used in the operation • To control requisitioning, storage and careful use of all Operating Equipment and Supplies. • To maximize employee productivity through the use of multi-skilling, multi-tasking and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests. • To ensure that breakages are administered so as to provide constant feedback to the operation as a tool to reduce breakages and losses • Working closely with the Kitchen, Service, Engineering and Events departments in particular to keep the operations run smoothly and ultimately making sure that the guest has had a fantastic experience staying in our hotel. • Supervise the Stewarding Supervisors in conducting proper Quarterly Inventory for the F&B Outlets and Stewarding Stores. • To assist in effective payroll control through a flexible work force and maximum utilization of the work force. • Compiling duty roasters for the full time staff as well as the part time staff. • To conduct staff yearly performance appraisals.
