About Penelope Wong
1989 - As free labor in my parent\'s restaurant as a dishwasher, busser, host, cashier, prep cook and eventually full time cook, I received a free education and the most valuable experience of my future career. Initially applying as a banquet server for Glenmoor CC in 1998, the F&B Director passed my resume along to the Chef; this would be the first \"professional\" kitchen I had stepped foot in. My prior experience with professional kitchens was via cooking shows on PBS. I started as a pantry line cook; to the surprise of the cook and wait staff as the only female to join the culinary team in years. I was promoted to sous chef within two years, served as interim chef twice and became the Executive Chef four years later as the youngest and first female Chef since the club opened in 1985. Executive chef from 20••••18, I proudly showcased my Chinese/Thai background fused with contemporary American cuisine.I was involved in the kitchen and restaurant design when Glenmoor CC underwent a full renovation in 2008. In 2009, I accepted dual responsibility as interim F&B Director, working closely with FOH managers to create a dining culture comparable to some of the best restaurants in the Denver area and maintained fiscal responsibility over the F&B department, helping to create the clubs first ever wait list status in the clubs history in 2011. Additionally, I’ve participated as a chef presenter in the 2015 annual Chef2Chef conference discussing ethnicity in club cuisine, as part of two separate chef panels discussing staff management, recruiting and other industry concerns in 2016, presented at two CMAA events in 2017 as well as led a panel discussion for Chef2Chef in 2018.I’ve also consulted on three major initiatives in product development, R&D as well as restaurant openings.Currently, I am starting a new initiative- opening my own dumpling food truck with my husband in the Denver metro area.
