In my never ending search for new challenges, I found a new \"hard to crack nut\": Fresh Filled Pasta Gluten Free. Gluten Free ravioli are difficult to make, without gluten you have little elasticity in the pasta.The challenge is to develop an outstanding product. It was hard to achieve but we made it.
