   Working under the beverage director of Pappas, I oversee the beverage operations of all Pappas Bros. Steakhouses, Yia Yia Marys, Pappas Delta Blues, Pappas Burger and Pappas Catering- In charge of creating all of the cocktails for Pappadeaux, Pappasitos, Pappas Bros. Steakhouse, Pappas Delta Blues, Yia Yia Mary\'s, Pappas Burger, and Pappas Seafood- Assist with beer selections for the entire Pappas company- Work on beverage education and training programs for all levels of employees from hourly to management. This includes written education, classes, creating educational videos, and in person training-Beverage management development- Develop and document back of house and front of house processes- Work with engineering and architects for design of bars and beverage stations for new restaurant and remodels- Open and train new restaurants. This includes opening orders ( liquor, glassware, etc.) and setting up of the bars- Managing liquor costs- Managing allocated items with distributors and wholesalers
