Head Brewer and Cellar Manager at New Magnolia Brewing CompanyHead Brewer experience- 3 national award winning IPAs (2 gold, 1 bronze)- Lead production of wort on 15 BBL system, 4 vessel system- Mill-in, mash-in, monitoring temperature control for various rests, pH measurement, and acid/mineral additions- Monitoring lautering including SG, vorlauf, pH, sparging, calculation of copper up volumes, transfer to boil kettle and grain out- Hop and other additions (yeastex, whirlfloc) for mash tun, boil kettle and whirlpool- Transfer of wort between brewhouse vessels- Knockout of wort and transfer to fermentation vessels at the required temperature- Calculation of mineral/salt/acid additions for beer styles- Derivation of beer recipes and enhancements to existing onesCellar side activities include- CIPs of fermentation vessels and brewhouse equipment- Monitoring fermentation progress (Cone dumping, gravities, pH levels, sensory analysis, temp control)- Dry hopping beer including temperature control and timing of dry hopping and crashing beers- Yeast pitching post knockout- Product transfer between fermentation vessels and brite tanks- Carbonation of product within vessels (CO2 introduction/monitoring including Zahm and Nagel readings)- Kegging beer, keg cleaning, product labeling and packaging log- Updating rolling 2 week cellar activity checklist- Capable of running our American Canning, 4 head, counter-pressure canning line- Other general cellar activities including maintenance, cleaning and trouble shooting activities in the breweryOther- Designed/built planning Excel tool to monitor inventory/pull thru rates to ascertain timing of future brewing needs- Distribution of product (including restaurants, bars, and retail outlets)- Attend weekly planning meetings with owner, taproom manager and sales rep to optimize product delivery and plan future brews given market feedback- Genuine love of craft beer and a homebrewer for 30 years
