Organize, direct and control all food and non food purchasing functions for Tao Chicago• Communicate with Director of Food and Beverage, Executive Chef and Sous Chefs and order all food and non-food supplies according to needs and specifications for service and upcoming events. • Obtain, compile, manage and execute bids from vendors according to specifications set by the standards of the Executive Chef and Corporate Executive Chef. Determine best possible price for desired items and place orders for all food, non-alcoholic beverages and non-food items. Review shipments to ensure products received are consistent with orders placed. Direct accountability for monitoring grades and quality of products to ensure compliance with Company standards.• Manage Food and Beverage requisition procedures to ensure each department’s needs are stocked in a timely manner with appropriate products requested by the specific department.• Monitor levels of inventories in order to minimize waste and maximize turnover, following FIFO system while maintaining storage and cleanliness standards promulgated by State and Local Health Department requirements.• Coordinate all administrative activities of purchasing department, including recruiting, staffing, orientation, schedules, attendance to meetings, supervision, performance evaluation, and record keeping. Set- up training programs to ensure consistent, high-quality service. • Accountable reporting line to Food and Beverage Director for daily operations and Corporate Director of Purchasing on purchasing policies.
