About John Winterman

Co-owner of the Michelin-starred Francie, John was previously Managing Partner at the James Beard Award-winning, Michelin-starred Bâtard. John built his expertise of +20 years of restaurant management and hospitality at celebrated restaurants such as Charlie Trotter, Gary Danko, and Restaurant Daniel. Prior to opening and managing Francie and Bâtard, John was the Maître d\'hôtel at Restaurant Daniel and Café Boulud. Along the way a passion for cheese, wine, hospitality, and the customs of the table took root. John can be found watching 80’s films, skiing, cooking at home, or writing in his free time and in fact has been featured in publications such as Town & Country, Food & Wine, Esquire, and CNN.

   Francie, after much delay, debuted in December 2020, and is the first independent collaboration between Chef-Owner Christopher Cipollone (Piora, Cotogna) and Owner-Operator John Winterman (Bâtard, Daniel). Francie is located on the corner of Broadway & Bedford in the heart of Williamsburg, Brooklyn, and has the convivial feel of a neighborhood brasserie. Located in a limestone-clad former bank building, Francie serves an approachable menu inspired by European flavors and designed for flexibility: snacks, shellfish, and first courses, followed by handmade pastas and main courses. Inspired choices include The Market Salad, Lobster Ravioli, Crown Roast of Duck, and Côte de Boeuf for Two. Save room for the Cheese Cart. The timeless space, designed by architect Glen Coben, is brought together by the open kitchen, a focal point that beckons both neighbors and guests to the warmth of the dining room.
