I am currently responsible for developing comprehensive menus & recipes, in collaboration with registered dietitians, and implementing an institutional “scratch kitchen”, based on nutritionally sound principals. I also championed a major POS system modernization, in collaboration with medical center IT, to address the needs of an ever-expanding operation.Additionally, I am managing the sourcing of goods throughout the Covid-19 crisis, where I established an emergency warehouse and perform crisis management from within the hospital. I oversee and direct the “contact-free” mobile and online hospital café pre-ordering project, with a customized URL for employees and QR codes for guests.I\'ve conceptualized, planned, and executed the opening of over 12 retail venues, varying in size and style, including menu creation, equipment selection and procurement, and workflow design, while curating a 100% compostable disposables program for patient trays and 15 retail cafes, creating zero-waste.I also implement and maintain Cloud-based, “Universal Menu” storage for all four hospitals, providing stakeholders access to menus, recipes, food specification PDF’s, and real-time tracking of updates and modifications, and am a member of the NYU Langone Health Sustainability & Energy Team, focused on robust sustainability goals.
