About Greg Severn
I left the retail purchasing side of specialty foods in November of 2020 and began baking naturally leavened bread. First it started off as an exploration into long fermented doughs for better gut health, turning into an obsession as I baked week after week. I did some retail consulting, kicked around the idea of getting back into purchasing and procurement-I even drew up a business plan, talked to lenders, and explored available commercial spaces in Sacramento to open up a cheese shop (I am a Certified Cheese Professional after all!) that was going to feature my sourdough bread, low intervention wine, local/locally-relevant accouterments, charcuterie, bean to bar chocolates & confections, local coffee, and miscellaneous specialty staples.However, the reason I wanted to open the shop was to have a space to bake bread that would pair with the cheese and charcuterie I planned to sell-my own private label sourdough made in the ilk of Tartine, Josey Baker, Della Fattoria, Fire Brand, Rize Up etc. Well, you can clearly see the rub here, I wanted to run a specialty retail shop to bake bread.I decided to tease out my passion, so I took some classes at the San Francisco Baking Institute, converted my personal webpage to my new business, got some permits, relied on amazing friends for branding and marketing support, worked with an awesome baker in SF, bought an oven, borrowed equipment from Rize Up (the awesome baker in SF), and bought a ton of bannetons/brotforms. Manzanita Bakehouse was born.
