Elle accueille plusieurs centaine de personnes en visites pédagogique ou formation autour du thé chaque année. Elle voyage en immersion à travers les pays producteurs de thé pour découvrir les recettes de fabrication du thé plusieurs fois par an. Elle a plusieurs certifications de culture et de transformation de thé en Chine avec l’université agricole du Sichuan, de l’université agricole du Fujian et de l’université agricole du Zhejiang Elle est consultante et expert référencée à l’université agricole du Zhejiang.Elle a travaillé dans une ferme de thé au Japon. Elle est la Secrétaire Générale de l’association Européenne des producteurs de thé EuT. Et elle est à l\'initiative d\'un projet de recherche pour démarrer une réflexion de filière théicole en Normandie avec un centre de recherche sur le végétal et un lycée agricole. Le projet est soutenu financièrement par la région Normandie et s’étale sur 3 ans (démarrage janvier 2026).Gaëlle Rousseau has been a tea grower for six years and manages two tea gardens in Normandy and Paris, totaling tea plants. Each year, she welcomes several hundred visitors for educational tours and training sessions focused on tea.Several times a year, she travels to tea-producing countries for immersive experiences to learn traditional tea-processing methods. She has obtained several certifications in tea cultivation and processing in China from the Sichuan Agricultural University, the Fujian Agriculture and Forestry University, and Zhejiang Agricultural University. She is also a consultant and recognized expert referenced by Zhejiang Agricultural University.She has worked on a tea farm in Japan. She is the Secretary General of the European Tea Growers Association (EuT). She also initiated a research project aimed at starting a structured reflection on developing a tea sector in Normandy, in collaboration with a plant research center and an agricultural high school. The project is financially supported by the Normandy Region and will run for three years, starting in January 2026.
