About Federico Bueno
Hard-worker, open-minded, and organized individual. The knowledge and experiences obtained during my Master and PhD studies have helped me to become a critical thinker and a constant problem-solver. I am a fast-learner who easily adapts to changes and new work environments. • I have experience in Food Safety, Food Microbiology, and Quality Assurance from my internships and current role at PepsiCo as a QA Senior Engineer. I also have experience in Food Chemistry, Food Bioprocessing Engineering, and Product Development from Louisiana State University and my past job at the LSU AgCenter Food Incubator. • In 2020, I became a Preventive Control Qualified Individual (PCQI) from the Food Safety Preventive Controls Alliance (FSPCA). • At Louisiana State University I taught the laboratory portion of Food Preservation (NFS 4075), Food Engineering (NFS 4005) and Quantitative Biology in Biological Engineering (BE 2352). • I have published 4 peer-reviewed journal articles in different fields including food bioprocessing engineering, probiotic beverage and powders product development and characterization, and encapsulation of particles for slow release. • My PhD researched focused on the production, purification, and characterization of bacterial cellulose from the fermentation of coffee kombucha and the assessment of its efficacy to remove pathogenic bacteria from contaminated water and a pollutant dye from aqueous solution. Oversee and support Valhalla’s Microbiology Laboratory activities including routinary microbiological testing, micro-challenge studies, proficiency testing, lab safety, chemical and consumable inventory, and overall daily duties. • Evaluate and investigate rapid microbiological testing methods/equipment to decrease beverage pre-incubation and microbial detection times for R&D and field applications. Some of the worked completed has helped to reduced up to 50% in turn-around times for microbiological testing. • Enable innovation and development by supporting Valhalla’s equipment validations and microbiological support to R&D and global cross-functional teams (preservative system assessments, specification approvals, processing and product launching support). • Evaluate and contribute in technical reviews with the PepsiCo Global Micro Council (PGMC) and Microbiological Sampling Plan Committee. Approve new methods based on the literature, historical data, and testing validations. Update and develop Microbiological Sampling Plans for our worldwide facilities based on Beverages thermal/non-thermal processes.
