ABOUT EMANUELA PEPE
I\'m a young food technologist, qualified to the profession. From 2020 to 2022, I was involved in a research fellow on special breads production, charachterized by a low glycemic index and high nutritional value. This experience allowed me to learn more about food analysis (in vitro digestion, microbiological assays.) and the use of analytical instruments/technologies, including Steam distillation, Soxhlet extraction, SPME, GC MS, GC FID, UPLC and HPLC. I currently work in a research center, as a Lab Analyst, where I deal with chemical analysis of water, soils, waste and food.They usually describe me as a curious, creative and dynamic person, inclined to organization and to improve herself.
