Drums are so much better than flats…I’m a self-proclaimed chicken wing aficionado. I approach chicken wings as both craft and commentary. Texture matters. Heat matters. Intent matters. This is not about eating. This is about standards.Blue cheese is not a suggestion. It is the correct answer. Ranch is a fallback option invented for people who fear commitment.I advocate for nontraditional wings. Smoked, grilled, confit, baked, rotisserie, or any combination thereof. If your wings only identity is “fried and tossed,” that is fine, but it is also the beige minivan of poultry experiences.I believe drums are superior to flats, celery is optional, and sauce should complement the wing, not erase it.I’m here to elevate the conversation, challenge mediocrity, and politely but firmly question why anyone would choose boring fried chicken wings when the world is full of better ideas.Oh, and my actual job is helping restaurants win with intentional solutions that solve real problems and genuinely elevate the guest experience.
