I had been completed 6 years in Schreiber Dynamix dairy as a Sr.Associate in Processed cheese.In this tenure I combinely completed some project like,1) Online product cooling system,2) Cost reduction in ceka block by changing the recipe,3) OEE improvement in IWS & Casted line by 20%.4) Chiplet productivity improved by 3.8 kg/hr and so on.I was associated with Milky Mist dairy for 5 years. Milky Mist is one of the leading Paneer manufacturing dairy and role model for all private sector due to their visionary management, strong marketing strategy,state-of-art technology & complete basket of premium range products.Here,I was leading Cheese project & cheese/Paneer production activities and I would like to say that we successfully installed and commissioned the 35 MT/day Processed Cheese project & 40 MT/day Paneer project.Some Projects -1) New products development like Processed cheese Hard Block,Pizza cheese Block, cream cheese,cheese sauce 2) Productivity improvement for * IWS - From 32 kg/man-hr to 55 kg/man-hr,* Cube - From 6 kg/man-hr to 11 kg/man-hr,* Block - From 17 kg/man-hr to 33 kg/man-hr,3) Processed cheese recipe optimisation - savings 10 lack/annum4) CIP optimisation and stabilisation - 5 lack/annum5) Cheddar cheese Pressing whey recovery ( 1155kg TS/annum)6) Recipe optimisation of Processed cheese block which saves Rs.46/kg
