About Allison Brown
I\'m a Senior Research Scientist in Cocoa Science at The Hershey Company. In my current role, I initiate and support fundamental research on cacao and cocoa that supports cocoa sustainability. Prior to my career at The Hershey Company, I graduated with a dual-title PhD in food science and international agriculture and development. Over the past 12 years, I have researched cocoa and chocolate flavor and functionality, from bean to bar, using physical, chemical, and sensory analysis techniques. Additionally, I have used qualitative methods to understand consumer perception of chocolate as well as the impact of an in-country cocoa liquor panel on cocoa quality. My most recent publication from my PhD dissertation research provided insight on the effect of fat content on sensory properties of two ingredient 70% cacao dark chocolate: Stay tuned for more upcoming publications from my PhD dissertation!
